Getting started — first setup
When you first set up your Breville machine, take your time with the initial flush and calibration. Fill the water tank with filtered water — this makes a significant difference to both taste and machine longevity. Run two or three blank shots through the group head before pulling your first espresso to heat the machine evenly and clear any residue from the factory.
For the Barista Express and Barista Pro, start with the grind size in the middle of the range — around 5 or 6 on the dial — and adjust from there based on your results. The Barista Touch has a guided setup mode that walks you through this automatically.
One thing many new owners overlook — let the machine heat up fully before pulling your first shot. Give it at least 5 minutes after the ready light comes on, especially in winter. A cold group head is one of the most common causes of sour, underextracted espresso.
Dialling in your espresso
Dialling in is the process of adjusting your grind size, dose and extraction time to get the best possible shot from your coffee. It sounds technical but once you understand the basics it becomes second nature.
The key variables to work with are:
Grind size — finer grinds slow extraction and produce more intensity. Coarser grinds speed it up and produce a lighter, more acidic shot. On the Barista Express, adjust one step at a time and pull a shot before adjusting again.
Dose — how much coffee you're putting in the basket. For a double shot, aim for 18-20g in the double basket. The built-in grinder on the Barista Express and Barista Pro can be adjusted using the grind amount dial on the front.
Extraction time — a good espresso should extract in 25-35 seconds from the moment the pump starts. If it's running faster than 25 seconds your grind is too coarse. Slower than 35 seconds and it's too fine.
What to taste for — a well-extracted espresso should be balanced, with sweetness, body and a clean finish. Sour or sharp flavours usually mean underextraction — go finer. Bitter or harsh flavours usually mean overextraction — go coarser.
Fresh coffee makes a huge difference here. Beans that are more than 4-6 weeks past their roast date are significantly harder to dial in and produce flat, lifeless espresso. Cleaning and maintenance
Regular cleaning is the single biggest factor in how long your Breville machine lasts and how consistently good your espresso tastes. Here's what to do and when:
Daily
- Purge the steam wand immediately after steaming milk — wipe it down with a damp cloth
- Remove the portafilter and knock out the puck after each use
- Rinse the drip tray
Weekly
- Backflush the group head using a blind basket and backflush cleaning disc. This removes coffee oils and residue that build up in the solenoid valve and group head
- Rinse the water tank and refill with fresh filtered water
- Wipe down the exterior including the grinder chute
Monthly
- Replace or clean the group head gasket seal if you notice any leaking around the portafilter
- Check the water filter and replace if needed — a fresh water filter prevents scale build-up in the boiler which is the most common cause of machine failure
- Run a full descale cycle if your machine prompts it
Every 3-6 months
- Replace the group head gasket seal as a preventative measure even if it's not visibly worn
- Deep clean the grinder burrs with a grinder cleaning tablet

The coffee matters as much as the machine
Even the best technique and the cleanest machine won't save stale coffee. Breville machines are capable of producing exceptional espresso — but only if the coffee you're putting through them is fresh, well-roasted and suited to espresso.
One tip worth knowing - avoid storing your beans in the
hopper long term. The heat from the machine transfers
to the hopper and accelerates staling. Instead, keep
your beans in an airtight container and only load what
you need for the day.
