Colombia El Indio is a natural processed coffee chosen for its big sweetness, fruit-forward notes and complexity.  We have a small quantity of this coffee available roasted for filter style brewing methods.

*This coffee may take longer to ship as we don't roast it as often.

Around 80% of what these farms produce goes through natural processing, and it shows in how deliberate the process is. Cherries are hand-selected at peak ripeness, then laid out on raised beds or concrete patios to sun-dry, checked four times a day so the drying stays even, right through the region's regular harvest-season rain.

Brew Recipe

Filter Brew Ratio: 1:17
Brew Time: Around 2 minutes (depending on method).

That means for every 1g of coffee, use 17g of water.
Example: 15g of ground coffee = 255g water.
Using a French Press? Try 2 heaped tablespoons (about 14g) with 240–250ml hot water.

Water Temperature: 89 degrees celsius. Our natural processed coffee's typically extract better with lower temperatures.

Where it's from

Tolima sits high in Colombia's coffee belt, all fresh mountain air and volcanic soil, and it's long been one of the country's most decorated growing regions, regularly represented in the Cup of Excellence. This lot comes from smallholder farmers and associations in Planadas, most working under 4 hectares, who've spent years mastering the natural process. Cofinet has worked alongside them directly, providing training and technical support to keep quality consistent from cherry to cup.

All orders placed before 9:00am on working days (Mon - Fri excluding public holidays) we endeavour to dispatch that day.  Sometimes we run out of cofee and its possible your order may take an extra day.  The courier aims to deliver your parcel overnight however we frequently encounter courier delays. 

You will receive an e-mail notification with your tracking number when your order has been shipped.  Once this e-mail has been received your order should arrive the next working day or the day after for rural and more remote locations.
